I love muffins, if I can eat something sweet for breakfast I am in. My top two muffins that I make are chocolate and banana; to be honest I wasn’t a fan of banana muffins until I began to bake them myself.
What set me off from them are the nuts, I’m not allergic but I don’t enjoy any type of nut; peanut, walnut, almond, no thank you. I decided to make my own banana muffins one day because I had bananas that were about to go bad and I didn’t want to make banana bread. Here is the recipe I use to make quick and easy banana muffins:
You will need 1 and 1/2 cup flour
1 and 1/2 tsp baking powder
1/4 tsp baking soda
2 mashed bananas
A pinch of cinnamon
3/4 cup sugar
1/4 cup of oil
•Mix bananas, egg, and oil together
• Add flour, baking powder, baking soda, cinnamon, and sugar. Mix until the dry ingredients are completely mixed in.
• Scoop into a greased muffin tin and bake for 15 minutes.
I will split the mixture in half so I can add chocolate chips to one half before baking. My daughter is a chocolate hater, she refuses to eat them with any chocolate chip inside. You can easily double the batch to make a set for everyone’s taste. I will sometimes double so I can freeze one batch, to freeze just wrap each muffin individually before placing in a freezer bag or container.
